How can I delete a use who is not my organitazation anymore?

On the week view, pass your mouse over his/her avatar, an icon will appear that will allow you to remove them from the workspace.

I did it, but I still see the user's "role" on the left sidebar.

Ah I see, you can then archive that role by passing your mouse over the role's header and click on the pen icon. You will find the Archive button in the dialog box.
